Answer:

Heating raw potatoes in hot water will make the starch granule swell and absorb water, becoming soft and easier to digest. Eggs contain mostly protein in liquid form. Heating protein will make it undergo denaturation process. The protein structure changes, becoming firm solid and easier to digest.
